doppler on US

During my US, the technician switched to what she called "doppler": once over the placenta and once over the baby. It is my understanding that it somehow measures bloodflow. There were a bunch of different colors like what you would see on doppler radar for the weather. What do these different colors represent? Velocity of blood flow, density, direction? What is the usefulness of the doppler study?
