Yes, it is always possible you will conceive once you go off of the pill. That is one of the reasons gyn providers choose to put folks on the pill. YOu might be still ovulating, but typiclly PCOS folks don't ovulate every month. So, learn how to track your cycles, and look for the SS of ovulation.

Again, folks have found Metformin helps the cycles to get back into balance, and sometimes they conceive taking Metformin.
