Amy, I was facing an oopherectomy last fall, and I was told by my doctor that if my one ovary were removed, I should see very little change in hormones. It's amazing, but the other can eventually learn to pick up the slack, and even to ovulate every month to make up for the lost ovary. Hope this helped.
