You are protected during the whole seven days by the three weeks of active pills you took. How many days you bleed doesn't matter.

Why not try to shift your pill time by a half-hour each day until you get it to a convenient time?

Yes. If it's not better after three cycles, or if it's really driving you nuts, then you might try a different brand.
