Possible.

>On Saturday night, I had all the signs of ovulation: egg-white cervical fluid, pain on my left side, OPK said definitely. I thought I timed intercourse perfectly. I was just sure when I woke up Sunday that my temperature would be up because I had ovulated but it wasn't. It also did not go up yesterday. My temp finally went up this morning (Tuesday) but not much. I am just wondering if I may have ovulated but the progesterone did not kick in for about two days - does this happen?

Yup. Actually, it's the progesterone that may have been elevated but just didn't elevate the temp;

Anovulation diagnosis will have to wait and can only be made in retrospect at the end of the month.
