I just attended the 2002 Penn Annual Conference (a continuing education seminar for veterinarians) and took part in the bioterror/agroterror/zoonosis/foodborne disease lecture series. We had USDA and FSIS people commenting on the presented material. There was a report of one listeria outbreak due to contamination of smoked salmon, in Canada, some time in the past ten years. Of course, much more commonly listeria is seen in lunch meats and cheeses and cole slaw and stuff like that. The thing is, you can only be so careful. Even if you become a total vegetarian, you're still at risk for infection by enterotoxigenic E. Coli spp, particularly the 0157 variety which can kill... so, you know, I'd just be careful with your personal hygeine, careful with your food preparation, careful to avoid food of dubious origins...and then don't obsess over it.
