2nd trimester questions

I just started my 2nd trimester. I was told that all major organs, major fetal development happen in the first trimester. So, my question is, does that mean the risk of any kind of abnormalities goes down once you enter the 2nd trimester?

I am not looking to go haywire, but since I tried to avoid chocolate the first trimester due to miscarriage and caffeine, does that mean I can indulge in it a little more now without worrying so much?

Also, can I highlight my hair without freaking out too?

Also, when do you start to feel fetal movement?

Thank you very much for your help.
