In that nitrates are a real unknown, the basic recommendation is to keep them to a minimum. Nitrates are found most commonly in hot dogs, ham, salami, pastrami, corned beef. My understanding it is less so in turkey and roast beef but you may wish to go to the supermarket and check this out for yourself.
