Re: Low carb diet, etc.From: Char (anonymous@obgyn.net)Sat, 30 Aug 2003 10:00:58 -0500 (CDT)
I follow a semi-low-carb diet. I have completely cut out foods like beans, corn and all corn products, and all processed grains (I eat whole grains only) and only allow myself potatoes once or twice a month as a treat. Those are the foods that bother me the most, the real heavy starchy kind. I eat some kind of protein with every meal and drink a soy-protein drink as a snack almost every day. I have a little bit of good fat everyday, such as canola oil to fry my eggs, nuts, sunflower seeds, or ground flax seeds. I also eat veges and drinks LOTS of water. Fruit is high in fructose sugar, but it is not as bad as it seems. If you eat fruit on an empty stomach and don't mix it with other foods, or as an appetizer before your regular meal, the fruit stays in the stomach a very short period of time, like 15 minutes only, and doesn't need much digesting. It does whatever it has to do in the intestines. So, the pancreas does not produce large amounts of insulin in this case. I love summer fruits too. I start my day every day with a plate of at least 3 varieties, BEFORE my eggs or cottage cheese and cereal. Fruit is also very high in all kinds of wonderful enzymes that help prevent cancer. Some who try to low carb still can't handle fruit, but if it doesn't bother you, keep eating it, it is good for you.
