Helga: Try the book, "PCOS, A woman's guide to dealing with polycystic ovary syndrome", by Colette Harris w/ Dr. Adam Carey. It's published in London, so you should be able to find it in Scotland (hopefully), if not, go to Amazon.com and look atit. At Amazon.com you can read part of the pages and book to see if you think it would be something that would be applicable and help you. I do know they deal with Carb & Vegan issues in the book. Check it out. I personally followed the Atkin's diet and it was a success for me. A lot of people think it is extreme, which it may be at first, but by the time you're done, you will be eating veggies, low glycemic fruits and wholegrains. I'm not sure about how you get around meat. If you do it for diet, then it usually doesn't work if you're I/R. I was a vegan for about a year and actually GAINED about 40 lbs. Later I found out it was one of the worst things I could have done. I ate a lot of rice and pasta and just kept blimping up. If you are a vegan for ethical reasons then I know that there are protein substitutes but you will need to eat more of those as protein builds muscle and muscle mass effects your resting metabolic rate, which means, burning of calories. Hope this helps. Oh, and Leigh Ann was right, stay away from anything white. White sugars, white rice, white flours, etc. It goes in virtually as sugar. P.S. the Atkin's website allows you to purchase foods, such as chocolate without the sugar. Check that out too. :)
