Hi Ann,

First off I want to say that I dont low carb, rather that i have lowered my carbs and try to eat the right ones. I gave up pop years ago so that wasnt a problem for me. I try to stick to whole grains for my pastas and bread. No sin in having pizza if you're eating whole wheat dough. I find it a pain to cook brown rice for dinner all the time (50 mins once it starts to boil), so what I do is make a big batch of it and freeze it into dinner size servings. I cook it in chicken broth, onions, celery and seasoning. I find that freezing it actually takes that slight grittiness out of it. Be cafeful when you're buying whole wheat pasta and bread. Many are blends white white flour added in. Look for the brands that say 100% whole wheat.

Once you get the hang of it, its really not to bad and you wont crave the bad carbs as much because the complexed carbs dont cause the "I must have a dessert after supper" that happens when you eat the proccesed carbs.
