Another thought in addition to the cortisol issue I just wrote.
How is your doctor testing your glucose/insulin levels? Just fasting?
Here is something my doctor did. He tested my levels fasting in the
morning. Then he sent me home and told me to eat a good balanced
breakfast with protein carbs, etc. Then 2 hours after I finished
breakfast I was back in his office getting another glucose/insulin test.
The comparison of the 2 tests shows what is really going on before and
after you eat.
