Did they test for glucose tolerance using serum glucose and serum
insulin. From your symptoms perhaps to are having insulin surges
followed by hypoglycaemia. Which will not be detected during the
fasting tests.
Would try experimenting with foods - particularly low glycaemic index
foods and limiting carbs. Also make sure you eat both fat and protein
whenever you have carbs.
Have you been tried on metformin.
Hope you can get some answers soon.
