Hi there, you may want to check out dr.mirkin.com. He is a doctor whose
wife is a dietician and has loads of great recipes for healthy eating as
well as diabetics. She uses so much rice and unrefined stuff it's
great. Have a peek, they even have a cookbook out. For the record,
brown rice is not the same as wild rice. It's wild rice you are looking
for to use in place of white. It's almost black in colour and tastes
really really nutty. It's awesome. I use double the water to rice
ratio and add some chicken or veg. stock to the cooking water and it
does cook for appr. 1 hour. I always drain and rinse before I serve it
cause I don't like the slimy bit ! Hope this helps some. Take care,
