The tech was probably wanting to compare the difference between your fasting blood levels of glucose and insulin, and then see what happens one hour later after eating something. As insulin resistance usually occurs 1 to 2 hours after eating, this would make sense. That happens to be exactly how my insulin resistance showed up. I did something very similar.

On the other hand, if you do not get the diagnosis of insulin resistance that it sounds like you want, you may want to take this a step further and request a 5 hour INSULIN/GLUCOSE Tolerance Test (IGTT). I have a friend who recently had this test, and the IR showed up in her 4th hour, and she was finally put on glucophage, and now feels a whole lot better.

If you are still not happy with your doctor, then I suggest you get a new one. For some reason, it is very hard to find doctors who understand IR and PCOS.
