Hi!

There are now low carb cook books out at bookstores. Also, check out http://www.atkinsfriends.com they sell low carb foods, offer support and have a HUGE recipe board where readers can post recipes and most of the recipes have carb counts.

I have a few easy recipes that I use myself:

Chicken Cordon Bleu: Take a cooked chicken breast and smear it with Dijon mustard. Cover with ham and swiss and broil.

Seafood Artichoke Dip: Mix together 2 - 8 oz. packages of cream cheese with one half of a box of drained leaf spinach, one box of drained and thawed artichoke hearts, a few tablespoons of parmesan cheese, a dash of lemon juice and white wine, a few sauteed mushrooms, a half cup of Hellman's Mayo, diced shrimp and crab. Butter a casserole and spread in the mixture and bake at 350 until hot and bubbly. Serve with lower carb veggies or mushrooms. Obviously this does have carbs but not tons from the cheese and so you can't gorge on it but it's so rich that you wouldn't want to gorge on it anyway. This is great as a dip or for stuffing a few mushrooms. God bless, Tera
