Wow, this is an interesting situation. It is probably PCOS is considered a 'pre-existing condition' and there is a wait time for getting on the insurance. Also, when you leave a job, usually you can get Cobra, which is an extension of your current coverage while you find new coverage, or a new job. Health insurance is fairly necessary, so I suspect you will eventually find something

Life insurance is a different thing. That is insurance for risk, and PCOS could be considerd an increased risk factor, like diabetes. So, it makes sense the rates are high. Life insurance is not essential but a nice to have.

If you have further problems I suggest you contact your State Insurance Commissioner, or at least go to their web site, and see what is there. Usually the Office of the Insurance Commissioner can help you find out where and how to get the correct Insurnace for heatlh care.

My personal opinion is that Health care should be an entitlement for all, and that all have basic coverage, which would cover essential medications such as what you are taking for a medical condition. It is a shame folks have to go through such hoops to get health insurance.
