I eat very few carbs. I don't count; just keep as low as possible, since I feel lousy and get very symptomatic when I eat more. I count total carbs, but keep a close eye on the sugar too. I use both numbers when comparing products. A typical day: Breakfast: 2 eggs scrambled without milk, with some sauteed onions, topped with hot sauce and wrapped in a warmed low-carb tortilla 2 poached eggs and bacon Lunch: salad with tuna salad or chicken salad hard boiled eggs (I work in a place with a meatless cafeteria) leftovers Dinner: Meat (chicken, steak, pork, shellfish, fish). I have lots of seasonings, so I avoid commercial marinades, which have lots of sugar Low-carb veggie of some type (broccoli, cauliflower, salad without high-carb veggies, brussel sprouts, asparagas, etc) I also have to eat snacks throughout the day to keep my symptoms controlled. I eat cheese, summer sausage, etc. It helps to have a partner to low-carb with. My husband decided to eat the same way I do for support. It helped tremendously. One thing to remember is that it gets easier as you do it. I've been doing it 3 years, and it's completely natural for me now. I don't think twice about it. I've cheated enough in the past to know how terrible it makes me feel, so rarely have an urge for "forbidden" food now. I just know how I need to eat, and I do it easily now. Good luck, Renee
