I never heard that the instant oatmeal was bad for PCOS/insulin resistance but if it is I would guess it's because it is not a whole grain.

I eat steel cut oatmeal which is whole grain. It takes 15-18 minutes to cook and it is very very good. It's full of fiber and protein and vitamins.

You can add all kinds of things to it to make it taste better. I add a vanila flavored whey protein powder and a little spenda, or flax seed meal for a protein packed high fiber meal.

If you can't find steel cut oatmeal at your grocery store, try a health food store.
