I don't have any recipes per se. What we do is cut up the veggies we have and sautee them in a big pan and serve it with either rice, whole wheat past or potatoes.

With whole wheat pasta a good option would be zucchini, squash, red pepper, green pepper, onion and garlic and then either diced tomatoes or tomato sauce.

The great thing about vegetarian cooking is that there are no rules you need to follow, they just taste great when combined.
