Hi Candi,

I agree with you. The thought of eating fatty foods just cause I am 'trying' to low carb actually makes me nauseous. When I discussed this with my endo, she said that low carb does not have to mean high fat. Ie. you don't have to eat fatty bacon every morning.

I personally use a less strict low carbing approach:- I make sure that I eat protein at every meal (but always a low fat source), I do eat low fat cheese, yoghurt, etc. I also try to make sure that I eat healthy fats through eating foods like nuts, fish, avocado, etc.

I don't worry about the cholesterol from foods like eggs, etc. because since I have been following this approach, my cholesterol has improved - despite eating a bit more fat than before when I was doing very low fat, high carb, low protein.

I also cook using healthy oils (in moderation) - such as olive, etc.

I do eat grains but only in whole-grain, high fibre forms.

So it is all in how you choose to implement and that is up to you.
