I have had a hard time with that as well since in my family, we have a genetic heart problem and have spent a life time avoiding a low carb diet. I have learned to resolve this in a couple of ways. 1) I eat only the leanest meat that I can find. Maverick Ranch meat has received approval from the American Heart Association and it has good flavor. Increase your intake of fish, expecially dark fish like salmon and tuna! :) 2) I only use 1% +A +b milk. It has a couple of more carbs than the whole milk so I limit my portions. 3) I try to make better carb choices. for example a white (Irish) potato is not good, instead try zucchini, broccoli, cauliflower, etc. I have cut back on carrots, bananas and grapes and eat apples, cucumbers, etc. Cut out white bread and eat whole wheat. I am still trying to find a good replacement for pasta in lasagne but for speghetti, try a speghetti squash. It is a fairly good alternative. The main thing that I did was go the the bookstore and pick up a couple of books that lists the carb and fat values of individual foods and then make my choices. Make sure you drink a lot of water.
