The atkins I'm following insists on 2 cups of veggies daily to maintain balance. It just limits the kind of veggies at first to the lowest carb content, later on you can do more mixing as you progress and learn how your body reacts to the carbs. It's true that it limits fruit, but it doesn't cut it out altogether. A handful of grapes or a fresh apricot is recommended.
