Ok you wanted to know about a low carb to no carb cheese cake and pudding well this is what I have done. And since being crafty in the kitchen and watching what I eat for over a few years now and also have chef experience of 10 years, check this out..................... Jello Fat free/sugar free (1 box any flavor) 1 & 1/2 cup of fat free Liquid Coffee Mate 1/2 cup of Heavy Whipping Cream Blend all this together chill and enjoy Or you can subsitute for 1 cup of whipping cream and 1 cup of water for the coffee creamer. Or use fat free sugar free cool whip in place of the water, coffee cream and Whipping cream. Now for the cheese cake...... 2 pkgs 8oz. Fat free cream cheese 1/2 cup of splenda (use the table on box to know what 1/2c of the spenda is in the amount of in pkg.) 2 eggs vanilla extract to taste ( I use 1/2 cup of imitation) Blend all ingredients then spray a pan (no crust) and pour mixture into pan and bake at 350 degrees for no more then 40 min. Usually a 30 min is long enough. Now for something really cool and awesome like cheesecake without the baking.................. 8oz of fat free cream cheese (softened) 1 large box sugar free/fat free jello gelatin (any flavor) If it calls for 4 cups of water only use 3 cups hot water. 1 12oz can of evaporated milk.( you may be able to find the ff/sf kind in grocery store) Place the evaporated milk in bowl and place in freezer until ice crystals form. In the meantime make your jello with hot water and let cool on counter. When you notice ice crystals on evaporated milk beat your cream cheese until smooth and add the (cool)jello to the cream cheese. And beat that together for a few minutes until well blended. Take the evaporated milk with the crystals and beat until really foamy and 2x its size if not 3x size. Then add the jello/cream cheese mixture to it but blend in with spatula or spoon. Place in 13 x 9 pan and chill until well firm. Wal-la. This has been my favorite since I do not like cheese cake but can make this with any flavor jello gelatin I like. Orange and Rasberry are out of this world! Again no crust you do not need it. We are watching carbs not fat grams. good luck and if you need anymore recipes let me know. I also have a peanut butter cookie that no one knows i use imitation sugar or stone ground whole wheat flour. take care Lauree
