For the same reason that eating a low carb diet helps to reduce IR. If your body has been treated well by low carbing, your bloodwork will appear more "healthy" than you would be if you ate a normal diet. You want to know I assume what shape your body would naturally be in, not what it is when you are treating the IR. Eating lots of carbs the three days before the IGTT will really increase your insulin levels and will make the IR more definite and obvious, easier to pick up through that test.

I totally stuffed this answer and rereading it, it doesn't make sense! But I'm going to post it anyway.... Sorry
