Hi, I find that 'complex carbs' are much better than simple which I should avoid like the plague. It may help to do some research on diabetic diets (that is the sort of diet guidelines we should be following) and in particular look at something called the glycemic index. Basically, as you say, all carbs are not equal, and some cause a much greater insulin surge than others... then it is up to you to experiment a bit and find out what foods are ok and what to avoid.
