hey! look into the soy zone. i is a vegetarian diet that is modified low carb i am sure you could adjust it to your lifestyle (or at least i hope you can =)

also, check out the glycemic index list on this page (http://www.mendosa.com/gi.htm) it lists a ton of foods and their glycemic indexes. you want something under 55 and the lower it it the less it will raise your insulin...which is a good thing.

additionally check out this link (http://www.camacdonald.com/lc/LowCarbohydrateCooking-Recipes.htm) it has all kinds of low-carb recipes including a lot of vegetarian ones (yeah i know youre vegan lol...but i think this might help a little =)

you are gonna have to be really careful how you go about this because you do not want to be lacking in nutrition. you might want to take calcium pills and a daily multivitamen just to be sure.
