You can find vanilla bean in the spice aisle of most grocery stores. It usually comes in a bottle. Durkee, and Spice Islands both sell it. The last time I bought it there were two beans in a glass bottle... It is pretty expensive, but it lasts a good long while. If you don't want to use vanilla bean or you can't find it, you could probably substitute a very small amount of vanilla extract - just a drizzle. Vanilla extract usually has some carbs in it, so be careful... I've also made it without vanilla and it was good too.

Splenda (Sucralose) is a fairly new sweetener that is made from sugar. You can cook with it and it doesn't break down - unlike Equal. If you can't find it in the grocery stores, you can order it online from quite a few places. You can look at their website http://www.splenda.com if you have more questions. You also COULD use another sweetener to make the cheesecake, although I think the aftertaste might ruin the cheesecake...
