Sucralose doesn't affect insulin. Thank god. I use it in EVERYTHING. Dr. Thatcher talkes about it in PCOS: The Hidden Epidemic and reccomends it. Quite a few Atkins products contain it also. I've been low carbing seriously for a few months and Splenda (Sucralose) has made my life a better place to be. A great thing about Sucralose is that you can cook with it. I've been making this low carb cheesecake (from the Atkins recipe) that is wonderful and only 3 grams of Carbs per slice!!! I use Splenda in hot coffee (decaf - because caffeine can affect insulin) and my own version of "Frapuccinos." I've even made great ice cream with it. Can you tell I LOVE THIS STUFF? They've just started marketing it here, but I've been a convert for a couple of months.
