Hello again miriam! So glad to hear that you found a doctor. He is right, low carb diets do help us to be healthier. PCOS (it seems) is caused by having too much insulin in your body. When you eat sugar or other carbs, your body reacts by making insulin to help you use it and get it out of your blood. So any time you eat carbohydrates, your body is making more insulin, making your symptoms worse. The less carbohydrate you eat, the lower your insulin will be, and the less your symptoms will be. Hope that helps explain it a little!
