Dear Stacy, I haven't posted for awhile. Been out of town, but when I read your post about side effects of low-carbing and drinking lots of caffeine, I wanted to comment. Many people don't know this, but caffeine is a major driving force in raising insulin levels. You may be getting a short term high, but the effect will wane and then you will have to deal with the long-lasting effects of higher insulin. I am speaking from experience as well as proven research. Another little know effect of caffeine is that it drives up your cortisol production which also produces high insulin, increased weight, hair growth and hair loss. Maybe a better balance of carbs, fat and protein will help with your fatigue.
