I recently had the same problem, I had the fasting glucose and insulin tests and they were normal (however if i stray off a low carb/glycmemic diet at all I get quite immediate hypoglycemic symptoms.)

My doctor also rechecked the results to make sure they were correct and they seemed to be. Does anyone know why you might have normal appearing insulin levels but still all the the IR symptoms, as I would like to try talk to my doc about it.

Thanks,
