i can't address all your questions. I'll try some of them. I use the glycemic index as a general guidline. I avoid white flour white rice, potatos sugar etc.. I do eat brown basmati rice, whole grain items and use fructose for baking(much lower glycemic index). I am on avandia also,which is supposed to make people gain weight but I have lost-slowly. I also exercise. I think dietary changes can make a big difference. I have not had too much trouble adjusting to the diet-you shouldn't either if you like cooking- pot lucks + dining out may be a challenge. Look in a health food store for wholegrain items-I found whole wheat phyllo. Good luck
