I've heard that too, that with us it is the sweet taste that is the insulin trigger. I don't know that it's been *proven* with substances like stevia and Splenda, but has been with aspartame. I personally like Splenda on occasion http://www.splenda.com I think that the Atkins bars and others are now made with Splenda.
