For those of us on low carb diets...we should still have some grain. I have a recipe that is GOOD for homemade bread. This will fit in a bread machine, by the way. I let my bread machine make/raise my dough, then I punch it down, make a loaf in a loaf pan, let it raise, and bake it myself. It's incredibly easy. For a delicious variation, add a little coursely ground grain of another kind, or even several. Or try adding seeds - sunflower or whatever. This all increases the protein content of the bread and it's Deeeeeelicious! Here's the recipe: 1 Tablespoon yeast in 1 1/2 cups warm water or warm milk [or half water/ half milk]. Stir and let dissolve. [don't let the water be tooo hot or it will kill the yeast. If it's too cool, the yeast won't dissolve] *optional* - one beaten egg 1 teaspoon salt 5 Tablespoons wheat gluten 4 cups 100% whole wheat flour. If you have a wheat grinder, grind your own [I do]. Wheat loses tons of it's nutrients immediately after cracking the grain, and if you grind it yourself, it retais more vitamins. 1 teaspoon olive oil. 1 teaspoon vanilla *optional* Mix, knead, raise, punch down, raise again in loaf form, and bake [or let your bread machine do all the work]. The WHEAT GLUTEN that you add is essential in 100% whole grain breads...it makes your bread as soft and pliable as store bought breads...mmmmmmmm... Love, Kristy Get Yahoo!
