Chrissy, think of it this way, you have a long life ahead of you and you can have whatever you want! Just not everything you want, all the time, every day. I find that I appreciate and enjoy my food more now. I also feel so much better, that I can't imagine wanting to go back to being tired and moody just so I eat unlimited carbs. If I really want something, I can have it. There are no carb police! I do however understand the consequences, and I know how to minimize them. "Low" carb means something different for each person, and I'm sure you will find a way to make this work for you, so that you can do it for life. It doesn't have to be a "diet". It is a different way of eating, I think of my "diet" as carbohydrate controlled. I have minimal carbs through the day - only veggies or certain fruits in limited amounts, and I eat them with protein and fiber to minimize the effect. At dinner I have my "reward" meal, so if I want a piece of bread or a dessert I have one. I just try to balance it with other things, I feel like I am really having my cake and eating it too, I feel better and I am still eating "fun" things, just not all the things I used to, and we each make trade offs to accomodate what is important to us.
