Insulin levels will not rise unless in response to a stimulus like food or excess glucose. Your symptoms do sound like hypoglycemia. Especially since the eating and waiting seems to work for you. The next time this happens, you might try writing down what you ate in your last meal before your "attack", also write down if there was any kind of stress that you had endured in the hours before and what time it is in your cycle. Since our hormones are different at different times of your cycle, this could trigger something that could cause your insulin/glucose to be at different levels during this time. The stress could be the same thing. I hope you will find some sort of common link. I will think about this and get back to you if I come up with anything... :-)
