I, too, am on Metformin/Glucophage. My OB/GYN put me on 500mg for 2-3 weeks, then 1000mg for 2-3 weeks, and now I am on 1500mg. Stepping it up slowly is the key. Wait until your body stabilizes before stepping it up for your symptoms will get increasingly worse. After about a week with 500mg and 1000mg my symptoms subsided. Although 1500mg by body still is reacting and I have been on it for 4 months! In my opinion each of us has a threshold.

The peak time of the effects of Metformin is 2-4 hours after taking the pill. I can almost set my clock that 3 hours after taking the pill I need to be near a bathroom. I have noticed though that the greasier the food the worse the symptoms (although that may be just in my head!).
