My girlfriend hasn't had this experience. She drinks moderately, no more than a glass of wine or two on a single occasion, and she has had no problems at all.

I think that sounds like a bad idea, personally. I'm no doctor to address your proposal with a medical perspective, but I'd be worried that going off metformin that long might mean the return of a period of uncomfortable adjustment when I resumed the drug. I'd also be concerned about elevated insulin levels exacerbating my condition while I was off the medication.
