For me, if I have carbs, it resolves it quickly, but I have a bigger crash soon after. Cheese resolves it in about 3 minutes. (yes, 3, it's not a typo).

If you can't have cheese, try another snack heavy on protein/low on carbs. Whatever you've found your body can handle (we each have a different carb tolerance--mine is extremely low). I carry snacks in my purse or bags. For a while I was really self conscious about eating snacks so much (especially because I'm "full-figured"). But, I realized that my health is the most important thing, and if people look at me funny, I just tell them that I'm hypoglycemic and need to snack often or my body goes out of whack. Sometimes I'll go into the longer discussion of hyperinsulinemia, my body's reactions, etc., but usually if they are a friend or they start to assume it's the same hypoglycemia that they or someone they know has which is purely low blood sugar, and is usually due to not eating.

I hate this condition. But, it's taken me a long time to come to terms with it, and realize that it will control me if I don't control it. I still go through periods where I get upset or depressed about it, and I sometimes mope that there are things I'll never be able to do (eg: some travel destinations with a high carb/low protein based diet, rugged areas {working in refugee camp in Netherlands or Estonian camp like my friend, or my dream of working with the lemurs in Madagascar}). But, I've got a great husband who helps me through them.
