Vicki, Try this, I love it and it can be made ahead. I call it Fiesta Chicken, it is Carb free and it is great with or on salad. 4-5 Boneless Skin Chicken Breast, one jar of Salsa. Put this in a crockpot at a low setting, and let it cook for 3-4 hours, the chicken will shred easily when it is done. I just eat it by itself, or like I salad.
