Has anyone gone low-carb by altering recipes that they love???

I guess that what I mean is: by changing the ingredients in recipes that they love to healthier ingredients. I made some really good pancakes the other day. I changed the flour to 3/4 c. unbleached flour and 1/4 wheat flour. It had been 1c. of flour. I also put in Stevia instead of sugar. My syrup recipe was one that I found in "The Carbohydrate Addicts Diet". I also made the pancakes very small and ate only one of them along with some eggs.

I'm just curious as to if anyone on here does it this way.
