I think the key to carb is moderate not extinction, your body actually does need them to function!

What is working for me (I'm on 2100mg of metformin) is low GI carbs during the day in small amounts, several meals a day and none at night. A small carb serving is an apple or low-fat fruit yogurt. Following a low GI program will sustain you longer throught out the day.

Check http://www.glycemicindex.com/ it's a Sydney University site which measures the gi factor in foods.
