Re: Lowering Carbs in DietFrom: Leslie (anonymous@obgyn.net)Wed, 15 Jan 2003 11:26:30 -0800
As far as carbs go...anything refined is considered a no-no. It simply breaks down into sugar in the body too quickly for it to be healthy/of use to us. Veggies are good, cold weather/seasonal fruit is good (including berries). Root veggies are high in starch/sugar, and unless in very small quantities, you might want to consider avoiding them. Baby potatoes don't seem to have the same starch ratio as the larger ones, so if you crave spuds, stick with those about 1" or smaller. Leafy veggies, things like broccoli, cauliflower, most green veggies are great foods for us! Eat these instead of rice, breads, and sugars. The higher the fiber content, the better off we are eating it, as this counteracts the carbs/sugar content of the food. Sometimes I find myself missing bread, and one of the things I have found (small quantities) that works for me is using sprouted breads, sourdough preferred. I avoid the pure wheat ones and stick with the multigrain. Apparently there is something in the processing that increases the glycemic index, which is avoided with sprouted breads. It is nice, because as a treat, I *can* on occasion have a hamburger or hotdog with a bun! Just be careful and check that label to make sure there is no processed flour in it. Hopes this helps somewhat! Leslie
