My neice definitely has Celiac's Disease. She was so
bloated and angry all the time, even at the age of 1.
We always just thought she was all baby fat. They did
many, many tests and they had to rethink about
everything they give her. IF she has fries cooked in
oil that fried chicken was cooked in, she gets deathly
sick. She can't have ANYTHING with gluten in it. But
my sister cooks everything from scratch. It's amazing
what things you can make substituting flour we
use...she has to use rice flour in everything she
makes for my niece Laney. THe food is yuck but Laney
doesn't have a choice!!
