I've since pieced together that the jejunal villous atrophy that occurs
in CD means that the brush border enzymes, which include the sugar
enzymes lactase, sucrase, maltase, are deficient..either one or some or
all depending on the degree of atrophy. Maltase is the sugar that
occurs in grains, including rice and also one of the sugars in fruit and
veg. (Basically any starch)
I'd still appreciate any direct research though if anyone has any..at
least then I can go to my gastro armed!
