Thanks for your reply, Pat (and Kim, who also replied to my post). Pat, when you say low glycemic veggies, are the ones to avoid things like corn, carrots, and peas?

I am definitely on a learning curve here! In another forum I posted that two of the cookbooks my DH and I have used to cook from regularly during our 14 year marriage were by Jane Brody, who advocates HIGH CARBOHYDRATE EATING! Arghhh. It's like I've been doing exactly the wrong stuff with regard to eating all these years. And here I thought that eating little animal flesh was a good thing, health wise. Live and learn.
