This is the same response I posted when this was posted on the PCOS main forum today.

Because the substitutes are so much sweeter, the amount needed would be miniscule, and hard to use. Therefore they bulk it up with dexrose and multidextrin to make it usable volumes. The downside, as you mentioned, is that those are high glycemic index items. In a small amount, it may be ok. But, it can add up fast.
