Karen,

Actually, with your diet change, you may have reduced your carbs, and lowered the glycemic index of your foods, which probably had an effect on your insulin. Some types of dairy have carbs in them. So, cutting them out cut your carbs.

Also, by eating whole foods, you are avoiding the hidden carbs in prepared and processed foods. And, by not processing them as much, the glycemic index is kept slow. You have lowered your carbs and carb impact with the diet you chose. So, carbs may have had an impact, more than you think.

I completely agree with your final statement. Nicely said.
