The Glycemic Index is a way of rating carbohydrates and how they affect your blood sugar. Low glycemic foods are usually high fiber, and high water, and seem to be most beneficial for providing phytonutrients, fiber and improve blood pressure, etc. High glycemic carbohydrates tend to be less high fiber, and more detrimental, as they affect blood glucose and other lipids. This is a way of making choices about carbohydrates, and choosing foods that are best for your health. Here is more information. I try to collect all of the articles I can. Using the GI is one option for diabetics, and is being used in Australia for diabetics. The idea is to keep the blood sugar level, but avoiding the high glycemic foods, which raise your blood sugar quickly.
